WHAT'S HAPPENING NOW
Veraison — the colour change — is one of the most dramatic moments in the olive grove. Over the course of a few weeks in September and October, the olives shift from hard, bright green to a mottled purple-green, eventually deepening to violet and black as they reach full ripeness.
