WHAT'S HAPPENING  NOW

At Cortijo El Marqués, the harvest — la cosecha — begins at first light. Teams move through the grove at dawn, laying nets beneath the trees and working the branches with rakes and combs so the fruit falls clean and undamaged. The olives arrive at the mill with their integrity intact.
